Smoked Gouda Mac and Cheese
Is there any food more satisfying than mac and cheese? I'm here to tell you there is! It's Smoked Gouda Mac and Cheese! Not only is it delicious af, but it's also vegan, gluten-free, and refined sugar free. Go ahead and have that second helping!
1 package gluten free noodles
1 can full fat coconut milk
1/2 cup water
1/2 cup raw cashews
4 tablespoons nutritional yeast
1 tablespoon lemon juice
1 tsp liquid smoke
1 teaspoon salt
1 clove garlic
Pepper to taste
Smoky Eggplant Bacon cut into small pieces
Preheat the oven to 350 degrees.
Cook noodles according to package instructions. .
In a blender, mix coconut milk, water, cashews, nutritional yeast, lemon juice, liquis smoke, salt, garlic, and pepper.
Pour cheese sauce and noodles into a pot and place on medium heat. Cook for about 5 minutes or until sauce begins to thicken.
Pour the noodles and sauce into a baking dish (either a pie pan or brownie pan will work best). Season with salt and pepper. Add the bacon bits and stir lightly to blend in the bigs.
Top with gluten free bread crumbs.
Bake for about 30 minutes or until the bread crumbs lightly brown.
