Vegan Caesar Dressing

Did you know that the Cesar salad was invented in Tijuana, Mexico? That’s right! It was popularized by Cesar Cardini at his restaurant Cesar’s in the 1920s. I’ve had the pleasure of eating at Cesar’s when I lived in Rosarito, and while I didn’t get to try the Cesar, the place is so adorable and delicious! The design of the restaurant is art deco and very vintage, and the food is awesome. Now, there was no way for them to make me a vegan Cesar because it traditionally includes anchovies, eggs, and parmesan, but we like to make ours with a white bean and cashew base. It’s so convincing, and super healthy! This version is vegan, gluten free, and oil free! This is how we made it:

Vegan Caesar Dressing

Ingredients:

1 cup white beans

½ cup raw cashews, soaked in boiling water for 20 mins

2 cloves garlic

½ cup water

2 tbsps apple cider vinegar

2 tbsp lemon juice

2 tbsp nutritional yeast

1 tsp vegan “fish” sauce or Bragg’s Liquid Aminos

1 tsp dijon mustard

¼ tsp black pepper

¼ tsp salt (or to taste)

Directions:

In a high powered blender, add the beans, soaked cashews, garlic, water, apple cider vinegar, lemon juice, nutritional yeast, “fish” sauce, dijon mustard, black pepper, and salt. Blend until smooth, and serve on romaine with your favorite veggies!
