Chickpea and Black Rice Burgers
These burgers are never mushy, always filling, and packed full of way more nutrients than your standard burger! They are a huge hit on the grill at cookouts, and when you don't feel like sharing with the whole neighborhood, make yourself one or two in your air fryer! This is how we made it:
1 cup cooked black rice
1 cup raw walnuts
½ white onion , finely chopped
2 cloves garlic, minced
2 tsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
Pinch of cayenne
½ tsp each sea salt
½ tsp black pepper
1 15 oz can of garbanzo beans, drained and rinsed
1/3 cup oat or garbanzo bean flour
Place the walnuts, chili powder, cumin, paprika, cayenne, salt, and pepper in a food processor. Blend until a fine meal is formed.
In a small skillet, sautee chopped onion.
Add onion, garlic, rice, and garbanzo beans to the food processor and process until there is still some texture to the beans and rice. You do not want a paste.
Transfer to a small bowl and add the flour. Stir to combine, then form 8 patties using about ⅓ cup of the mixture each.
To cook the burgers, you can throw them on a grill for about 3-4 minutes each side, use an air fryer at 350 degrees for 7 minutes each side, or you can cook them in a skillet on medium heat for about 3-4 minutes each side.
